Grilled Stuffed Flank Steak



Ingredients
  1. 2 medium garlic cloves , minced or pressed through garlic press (about 2 teaspoons)
  2. 1 small shallot , minced (about 2 tablespoons)
  3. 2 tablespoons fresh parsley leaves , finely minced
  4. 1 teaspoon sage leaves , finely minced
  5. 2 tablespoons olive oil , plus extra for oiling grate
  6. 1 flank steak (2- to 2 1/2-pounds) (see note)
  7. 4 ounces thinly sliced prosciutto
  8. 4 ounces thinly sliced provolone
  9. 8–12 skewers soaked in water for 30 minutes
  10. Kosher salt and ground black pepper
