Egg Salad Stuffed Carrot Crescents.



What a fun way to eat all of those easter eggs! Chop them up, whip up a yummy egg salad, and then stuff it into these cool little “carrot” crescents! If you don’t like the idea of using food coloring, Beth also suggest just brushing them with an egg wash. It’s not quite the same effect, but it still looks really cool!
